Solve your lunch or dinner dilemma with this deliciously indulgent vegetarian baked goat cheese quiche. It's rich, creamy and healthy whilst also super simple to make.
Ingredients:
- 1 Red Onion thinly sliced
- Spring Onion or Leek thinly sliced
- Olive Oil
- Pinch of Sea Salt
- 5 Eggs
- 2 Spoons of Cream Cheese or Yoghurt
- Pinch of Oregano
- Small Spoon Dijon Mustard
In a sauté pan, add olive oil, sea salt, red onions, spring onion and or leek. Cook on low stirring until cooked.
In a bowl, combine 5 eggs, 2 large spoons of cream (or substitute cream for 2 spoons of cream cheese or yogurt), a pinch of oregano and a small spoon of dijon mustard. Whisk together ingredients and let come to room temperature, so that the mixture is smooth.
Wait until both the eggs and onions are room temperature then combine and pour into pastry crust.

Crumble goat cheese on top of the quiche.
Bake at 180°C for about 40 minutes or until cooked.
